Corn Cookie Baking Mix: 8.5/10
These Corn Cookies are SO much better than I expected them to be! To be honest, I didn’t know quite what to expect. I thought they would be more savory like a corn bread cookie to be used as a side for chili. These #corncookies are more on the sweet side and taste almost IDENTICAL to sugar cookies with ground corn mixed in. The mix is so easy to bake up (mix in 2 sticks of softened butter and 1 egg with the packaged mix) and I’m happy to say it turns into amazing cookies! I don’t know how often I’ll desperately crave a corn cookie, but these would be a great dessert at a BBQ or crab boil! It’s $2.99 for this baking mix.

Got these last week! I love them. I made 1 dozen and then froze the dough for the other dozen. A good mix between like a sugar cookie and corn muffin.

I don’t know what I’m doing wrong 😭 I made them this afternoon and they looked NOTHING like this!!! They melted and spread in the oven and came out as crispy wafers (still tasty, but I don’t know how to make them look like the package, I followed the instructions exactly)… Then to try and figure out what went wrong, I adjusted the oven temp, refrigerated the dough, tried about 5 other things and still couldn’t get them to that perfect thickness with a chewy texture… Don’t understand why I’m having trouble when everybody else seems to get perfect cookies! I’m so bummed! 😔
I made them as thumbprint cookies some filled with blackberry jam some filled with coconut cream, came out awesome!

I finally made these cookies for our neighborhood “social distance” dinner. Everyone loved them. They are the perfect amount of sweet with that corn taste. So good.

Are the cookie mixes supposed to come sealed? My pumpkin one in similar container has a lid but no seal, which I found surprising?
