Ube Mochi Pancake and Waffle Mix: 8/10
I am so glad that this Ube Mochi Pancake and Waffle mix is back again this year! 🎉 Despite the batter’s bold, purple color, the pancakes and waffles themself are not overwhelmingly flavorful. They have a subtle, sweet, and nutty flavor just like the ice cream. Once you cook the batter, the purple color turns to golden brown and the pancakes and waffles get slightly crispy on the outside and interestingly chewy on the inside because of the mochi. I enjoyed this texture contrast and liked the waffles slightly more because they were even crispier on the outside while still having that chewy center. These were delicious dusted with powdered sugar and would be amazing topped with #traderjoes coconut whipped cream. Each box is $3.99.

I’m recently GF and I really hope I can find it this year! It sold out immediately here last year and I love a good waffle or pancake
Add coconut cream instead of water and add extra ube extract and it’s phenomenal as waffles ❤️
Loved the pancake topped with organic toasted granola, strawberries, and condensed milk with a bit of coconut whipped cream.

Anyone feels the flavor is different than last year? I feel this year it’s a bit saltier. I like the last year ones better 😢
