Spatchcocked Lemon Rosemary Chicken: 9/10
This is an item I have wanted to try for the longest time and I’m so glad I finally picked it up! There’s something so fancy about a butterflied, whole chicken, and this meal definitely lived up to the hype surrounding it. The chicken has a citrus brine and is marinated with olive oil, garlic, parsley, and lemon. First off! I love these ingredients. I appreciate that extra virgin olive oil is used instead of canola or sunflower oil. Much tastier and healthier! With how many herbs were in the marinade, I still felt like this chicken could’ve been seasoned more. The next time I buy this I am adding even more of my own lemon slices on top and more rosemary. I highly recommend broiling for 3-4 minutes at the end of the cook time too for crispy skin. We made garlic mashed potatoes and balsamic Brussel sprouts to go along with our meal and it was delicious! This chicken is $4.99/lb.
